Innovation in Catering award success for Oxford Brookes

Oxford Brookes University’s catering has been recognised with a top prize at the College and University Business Officers (CUBO) Awards.

Launched in 2012, the CUBO Awards are a yearly event to recognise the achievements of those working within the campus and commercial services area of higher education.
This year’s awards were held on 27 June 2018 and saw a record number of entries with Oxford Brookes, in partnership with Chartwells, picking up the Innovation in Catering accolade.
Phillipa Fletcher, Head of Commercial Operations at Oxford Brookes, commented: “When it comes to sourcing ingredients, Oxford Brookes prides itself on having one of the most ethical and environmentally conscientious policies in higher education. We use local Oxford farmers, producers and suppliers for eggs, meat and fruit and vegetables.
“We are Marine Stewardship Council (MSC) certified, use only Fairtrade coffee, cocoa, sugar and bananas, our homemade cakes use British flour milled in the UK and our milk is UK produced. Our policy includes initiatives in sustainable waste management and we have a number of environmental accreditations.”
Building on its status as the world’s first Fairtrade university and its MSC certification, Oxford Brookes achieved the highest three star rating with the Sustainable Restaurant Association last year. 77% of the University’s fresh meat, fruit, vegetables and milk is sourced from local and UK suppliers against a target of over 50%.
The passion that has gone into sourcing sustainable food gets translated into the food offer at Oxford Brookes. Using an array of local suppliers, the University keeps the food offer current with global street food, a vegan and vegetarian café, a new Smoothie Bar, artisan deli sandwiches and a popular home comfort food offer.
Oxford Brookes has introduced food waste management systems resulting in a 27% reduction in food waste, exceeding a target of 20%.
Six tonnes of coffee grounds have been used in gardens and allotments and taken out of food waste, with remaining waste going to the anaerobic digester five miles from campus.
Oxford Brookes recently introduced a Simply Cups recycling scheme to ensure our one-use coffee cups are recycled properly. The University has also brought in a 25p cup tax to encourage use of reusable mugs.
Across its campuses Oxford Brookes provides fresh, local, quality food whilst still offering great value for money for students, staff, the local community and visitors to the University.
