Our chef, Victoria is regularly complimented on the vegetarian options she selects for the menu here at Oxford Brookes and in this course she will teach you how to create many of them!
On this course you will learn what knifes are best suited to a particular job, how to handle and maintain them and use them with confidence.
You will be taught how to sharpen and cut accurately. The course will focus on vegetable, fruit and fish preparation.
We are delighted to have Eva and Donatella spending the day with us.
The day will start with coffee and pastries with a short talk from Eva. You will then have a hands on opportunity to try the various delights working alongside Eva and Donatelle.
Eva and Donatella will show you the essential pastry techniques required to build a classic French Gateaux Opera. You will learn to make an almond jaconde, a chocolate ganach, a buttercream and a chocolate glaze, and how to skillfully layer them in order to get a perfectly even result. You will then also see how you can use these techniques to make other desserts and petit fours, such as a glazed chocolate mousse and truffles. Lastly, our two guest teachers will show you how to make an amaretto ice cream to go with the desserts, and a few tricks for decorating and plating them.
This course is a firm favourite of the chefs with attendees being amazed at what they produce and take home.
Be prepared to roll your sleeves up as this course is very hands on. You will be making the doughs by hand using top quality flour and grains from our local mill (Wessex Mill).
In this masterclass, pâtissières Donatella and Eva will teach you how to master the perfect choux paste, one of the most versatile elements of French patisserie.
Make your afternoon tea, dinner party or buffet table look like a high-end pastry shop with recipes like Paris Brest, Religieuses, Profiteroles, Churros, Chouquettes, Eclairs and last but not least, as a showstopper, a Mini-Croquembouche.

This course is suitable for enthusiastic amateurs who are looking to further their skills and gain knowledge from the professionals. By the end of the 10 weeks you will have learnt a variety of skills and will have gained confidence in the kitchen.
You will be taught by the tutors that train our Oxford School of Hospitality students, on a day to day basis, for Brookes Restaurant, so you will be in good hands! For the final week we will be hosting a Gala Dinner which will involve working alongside the professionals, friends and family welcome.
