  • 6 Week Cookery

    9:30am to 12:30pm, Price: £390.00
    Every Friday. Starting Friday 14 September 2018
    This 6 week cookery course is every Friday morning from 14th September. The arrival time is 9:15am with the course commencing at 9:30am until 12:30pm.

    This course is suitable for enthusiastic amateurs who are looking to further their skills and gain knowledge from the professionals.

    By the end of the 6 weeks you will have learnt a variety of skills and will have gained confidence in the kitchen.

    You will be taught by the tutors that train our Oxford School of Hospitality students, on a day to day basis, for Brookes Restaurant, so you will be in good hands!

    You will be covering the following over the 6 weeks:

    • Week 1 - Knife skills
    • Week 2 - Yeast (bread)
    • Week 3 - Rice and pasta
    • Week 4 and 5 - Meat and fish
    • Week 6 - Desserts

    Indian supper

    A chance to impress your friends by learning how to cook authentic Indian dishes.

    Our guest Kashmira will be sharing her wealth of knowledge in Indian cuisine, including the use of a variety of spices. Kasmira will be teaching us how to cook dishes that have been passed down through her family for generations as well as some recipes that she has discovered from her travels around India.

    Assisted by Amanda, the day will be very hands on and feature demonstrations. At the end of the course, everyone’s efforts will be rewarded with your choice of a glass of wine or a soft drink and a sit down meal of the food that you have cooked during the day.

    Classic bread

    This course is a firm favourite of the chefs with attendees being amazed at what they produce and take home.

    Be prepared to roll your sleeves up as this course is very hands on. You will be making the doughs by hand using top quality flour and grains from our local mill (Wessex Mill).

    You will be given advice and tips on how to knead, prove and bake to get the best results. A range of breads will be created which you will take home at the end of the session.

    At the end of the session we will sit down to some lovely homemade bread, local cheeses and a glass of wine or soft drink. On the day aprons and workbooks are provided.

    With Christmas around the corner this is an ideal time to attend our festive bread course.

    This course will be presented by Amanda and Jan and will cover a range of breads including stollen, chalka/challah, as well as more rustic bread to accompany your cheese board.

    10 Week Cookery

    • Week 5, 6 and 7 - Meat and fish (starters and main courses)
    • Week 8 - Pastry - rough puff, choux, shortcrust and batters
    • Week 9 and 10 - Desserts
